# Tortillas ## Corn - Make sure masa and water mix is pretty wet, wait for 30m. - Cook first side for 30 to 45 seconds. - Flip and cook second side for 1 minute. - Flip and press once or twice with a spatula until tortilla puffs up slightly. - Cook for 30 seconds more. - Flip one last time and cook for 5 to 10 seconds. ## Flour ### Ingredients - 1 cup flour - 4 tbsp melted butter - 1/4th teaspoon salt - 1/3rd cup hot water ### Recipe - combine salt, flour, water, mix - add butter - knead for a minute - let sit for 8m somewhere hot - roll into 6-8 small balls - let sit on counter for 8m, heat griddle - get bowl of flour - pat into disks in flour bowl - roll thin, put on griddle - 10s on each side, another 10 on first side
