Chickpeas
- Soak 500g of chickpeas for 2 hours in water.
- Drain water, rinse.
- Soak in water overnight in fridge.
- Drain water, rinse, toss in baking soda.
- Let sit for 15m
- Drain, rinse.
- Put in a pot with double volume of water, and a cinnamon stick.
- Bring to boil uncovered, then skim off scum.
- Turn down to lowest heat, semi-cover pot, and cook for 45-90 minutes, until you can squish them between your fingers.
- Don't cook for too long, or they'll get mushy
- Drain water.
- Use or freeze them.
