Chickpeas

  • Soak 500g of chickpeas for 2 hours in water.
  • Drain water, rinse.
  • Soak in water overnight in fridge.
  • Drain water, rinse, toss in baking soda.
  • Let sit for 15m
  • Drain, rinse.
  • Put in a pot with double volume of water, and a cinnamon stick.
  • Bring to boil uncovered, then skim off scum.
  • Turn down to lowest heat, semi-cover pot, and cook for 45-90 minutes, until you can squish them between your fingers.
    • Don't cook for too long, or they'll get mushy
  • Drain water.
  • Use or freeze them.
