# Seasoned Fries
|

||

## Ingredients
|
||
|
||
- 3 lb or more of 1/4th cut inch fries
|
||
- 2 tbsp white vinegar
|
||
- 2 tbsp salt
|
||
|
||
## Recipe
|
||
|
||
- Put all 3 ingredients in a saucepan, covering with cold water.
|
||
- Boil for 5-10m, until soft but not breaking apart.
|
||
- Drain and spread on a paper towel–lined rimmed baking sheet. Dry for 5 minutes. Put in bowl.
|
||
- Deep fry in 400F oil in big batches for 1m only. Put back on baking sheet when done.
|
||
- Allow them to cool for 30m, or freeze them for up to 2 months.
|
||
- Deep fry them for 3.5m in small batches. Salt immediately.

# Old recipe
|
||
|
||
## Fry part
|
||
|
||
- Cut 1cm or 1/2 inch width
|
||
- Rinse water 15 minutes
|
||
- Pat dry with towel
|
||
- Fry for 270 deg for 10 minutes
|
||
- Let cool / put in freezer for 30 mins
|
||
- 400 deg for 10-12 minutes
|
||
|

## Ingredients

- 5 tbsp flour
|
||
- 1 tsp cayenne
|
||
- 1 tsp Smoked paprika
|
||
- 1 tsp Cayenne pepper
|
||
- 1 tsp onion powder
|
||
- 1 tsp garlic powder
|
||
- 1 tbsp ground black pepper Powder
|
||
- 1 cup water
|
||
|
||

- Deep fry fries
|
||
- Freeze for 2 hours
|
